Zesty Lemon Lime MELT Shrimp Tacos

Ingredients


For the Shrimp:

  • 500 g washed, peeled shrimp

  • 1 tablespoon olive oil

  • Salt and pepper to taste

 

For the Lemon Lime Sauce:

  • 1 tablespoon olive oil

  • 2/3 Lemon Lime MELT
  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon cumin

  • Salt and pepper to taste

 

For the Tacos: 

  • 8 small tortillas

  • 100 g salad mix (cabbage and carrots)

  • 1 avocado, sliced (optional)

  • Fresh cilantro (for garnish)

 

Instructions


  1. Cook the Shrimp: In a skillet over medium heat, sauté the shrimp with 1 tablespoon of olive oil. Season with salt and pepper. Cook for about 2-3 minutes on each side or until they are opaque and cooked through. Remove from heat.

  2. Make the Sauce: In a small bowl, mix together 1 tablespoon of olive oil, Lemon Lime MELT (see the recommended amount on the package), garlic powder, cumin, salt, and pepper. Adjust the seasoning to taste.

  3. Warm the Tortillas: Heat the tortillas until they become soft (you can place them over the gas flame for a few seconds, warm them in a skillet, or use the microwave).

  4. Assemble the Tacos: On each tortilla, place a handful of salad mix, add the cooked shrimp, and drizzle with the lemon lime sauce. If desired, top with avocado slices and garnish with fresh cilantro.

  5. Serve: Serve the tacos immediately with a lime wedge for squeezing on top.
