Ingredients
For the Shrimp:
500 g washed, peeled shrimp
1 tablespoon olive oil
Salt and pepper to taste
For the Lemon Lime Sauce:
1 tablespoon olive oil
2/3 Lemon Lime MELT
1/2 teaspoon garlic powder
1/2 teaspoon cumin
Salt and pepper to taste
For the Tacos:
8 small tortillas
100 g salad mix (cabbage and carrots)
1 avocado, sliced (optional)
Fresh cilantro (for garnish)
Instructions
Cook the Shrimp: In a skillet over medium heat, sauté the shrimp with 1 tablespoon of olive oil. Season with salt and pepper. Cook for about 2-3 minutes on each side or until they are opaque and cooked through. Remove from heat.
Make the Sauce: In a small bowl, mix together 1 tablespoon of olive oil, Lemon Lime MELT (see the recommended amount on the package), garlic powder, cumin, salt, and pepper. Adjust the seasoning to taste.
Warm the Tortillas: Heat the tortillas until they become soft (you can place them over the gas flame for a few seconds, warm them in a skillet, or use the microwave).
Assemble the Tacos: On each tortilla, place a handful of salad mix, add the cooked shrimp, and drizzle with the lemon lime sauce. If desired, top with avocado slices and garnish with fresh cilantro.
Serve: Serve the tacos immediately with a lime wedge for squeezing on top.
